Ingredients For sherry's shrimp creole

5 lbjumbo shrimp, peeled, deveined

salt and pepper to taste

1 Tbspminced lemongrass
-
1/2 colive oil
-
3 smonions, diced
-
4 Tbspminced garlic
-
1celery stalk, diced
-
1 mdred bell pepper, diced

5 lbheirloom tomatoes, peeled and chopped

1bayleaf
-
1/4 tspground allspice
-
1 Tbspcrushed red pepper flakes

2 Tbspfresh basil, chopped

6 crice, cooked
How To Make sherry's shrimp creole

1Place shrimp in lg bowl, sprinkle w/ salt, pepper and lemongrass. Heat 1/4 cup oil in lg skillet over medium heat. Add shrimp and saute until pink.

2Remove shrimp from skillet. Add remaining oil to skillet. Add onion, garlic, celery and red bell peppers. Cook, stirring for 2 mina. Add tomatoes. Reduce heat to med-low. Simmer for 5 mins. Add bayleaf, allspice and red pepper flakes. Simmer, stirring for 10 mins.

3Place shrimp back in skillet and basil. Cook 2 mins. Remove bayleaf. Serve over rice.
