1 1/2 lblarge fresh scallops dried well

2medium sized oranges sectioned-juice reserved

2 Tbspbutter
-
6 Tbspbutter-very cold and cubed

1shallot diced fine

1/4 cwhite wine or chicken stock
How To Make seared scallops with orange butter

1VERY IMPORTANT! ZEST YOUR ORANGES FIRST. RESERVE A TBLSP OF ZEST. CUT AROUND ORANGE TO PEEL AND CUT SEGMENTS FROM THE ORANGE. SET ASIDE SEGMENTS SQUEEZE JUICE INTO BOWL AND SET ASIDE-SHOULD BE AROUND 1/4 CUP OF JUICE.

2PAT SCALLOPS VERY DRY AND SEASON WITH SALT & PEPPER. SEAR SCALLOPS IN 2 TBSP BUTTER UNTIL CARAMELIZED ON EACH SIDE. (ABOUT A MINUTE) PATIENCE IS KEY-ONLY TURN THE SCALLOPS ONCE.

3SET SEARED SCALLOPS ASIDE WHILE PREPARING SAUCE. SAUTE SHALLOTS IN SMALL AMOUNT OF BUTTER UNTIL CLEAR. ADD IN ORANGE JUICE, ZEST AND CHICKEN STOCK OR WINE. REDUCE THIS TO HALF.

4***REMOVE SAUCE FROM HEAT*** WHISK COLD BUTTER 6 TBLSP INTO THE SAUCE A CUBE OR TWO AT A TIME. THIS WILL EMULSIFY THE SAUCE. ARRANGE SCALLOPS ON PLATTER-SPOON OVER SAUCE ARRANGE ORANGE SEGMENTS ON TOP AS GARNISH. A LITTLE PARSLY FOR COLOR IS ALWAYS NICE WITH THIS FOR PRESENTATION. ENJOY!
