- LIME SAUCE MIXTURE

2 Tbsplime juice, freshly squeezed, warmed

2 Tbspolive oil, extra virgin, warmed

2 Tbspsweet butter, unsalted, melted
- CRUST MIXTURE

1/3 cflour, all-purpose variety
-
1 tspfresh dill, finely chopped

1 tspsweet paprika
-
1 tspground cumin
-
1/2 tspsalt, kosher variety
-
1/4 tspwhite pepper, freshly ground
- THE FISH

8 ozcod fillet
-
1 clovegarlic, minced
-
2 Tbsppanko breadcrumbs
-
2 mdtomatoes, diced
-
3 Tbspparmesan cheese
How To Make seafood essentials: baked garlic, parmesan cod

1PREP/PREPARE

2Gather your Ingredients.

3Chop the tomatoes, and reserve.

4Place a rack in the middle position, and preheat the oven to 400f (205c).

5Combine the lime sauce mixture in a small dish, and add the crust mixture to another.

6Place the oil into a small cast-iron skillet over medium heat.
-
7Dip the cod filet in the lime sauce mixture, and then reserve the remaining lime sauce mixture.

8Drag the cod filet through the crust mixture.

9Add the minced garlic to the lime sauce mixture, stir to combine, and reserve.

10Add the filet to the hot pan.

11Cook to brown on both sides, about 2 minutes per side.

12Temporarily, remove the fish, and add the reserved tomatoes, and sprinkle with a bit of salt and pepper.

13Return the fish to the pan, and drizzle with the lime sauce mixture (with the added garlic) over the fish, and then sprinkle with the breadcrumbs and parmesan cheese.

14Add the skillet to the preheated oven, and bake until the fish easily flakes, about 10 - 12 minutes.
