The is an easy/peasy recipe to assemble, and have on the table in under an hour. The sauce does have a lot of bits to it, but they are simple items, and can be assembled in a matter of minutes. Serve with some buttered rice, and you have a plate of total comfort food. So, you ready… Let’s get into the kitchen.

Ingredients For seafood essentials: awesome baked bbq cod
- PLAN/PURCHASE

2 mdcod filets, about 6 ounces (170g) each
- THE SAUCE

1/2 cyellow onion, chopped

1 Tbspgrapeseed oil

1 Tbspsweet butter, unsalted

8 oztomato sauce
-
1/4 cfiltered water
-
1/3 ccoconut sugar, or brown sugar

1/4apple cider vinegar
-
1 Tbspworcestershire sauce
-
1 tspdehydrated onions, crushed to a powder

1 tspsalt, kosher variety, fine grind

1 tspmustard powder
-
1/2 tspprepared horseradish
-
1/4 tspgarlic powder

1/4 tspwhite pepper, freshly ground

1 pinchground cinnamon

freshly grated parmesan cheese, for topping

1PREP/PREPARE

2The recipe photos show only one filet, in a single-serve dish. Since I was making the sauce for the first time, I did not want to waste food; however, the amount of sauce that this recipe makes will be enough for 3; possibly 4 medium-size filets.

3Does it have to be cod? Heck no, choose any fish you fancy. I am even thinking that this would go great with shrimp.

4For presentation purposes, I am using single-serving All-Clad ovenproof skillets, but you could just as easily bake them all up a large skillet. And, now that I am thinking about it, small cast-iron skillets would be brilliant.

5Gather your Ingredients (mise en place).

6Add the oil and butter to a saucepan over medium heat.

7When the butter melts and stops foaming, give the pan a swirl to mix the oil and butter, and add the chopped onions.

8Add a slight pinch of salt, and cook, until the onions soften, but not brown, about 3 – 5 minutes.

9Add the remaining sauce ingredients, and bring up to a simmer.

10Stir and simmer, until the sauce begins to thicken, about 15 – 18 minutes.

11Chef’s Note: If the sauce appears too thin, just leave it on the burner for a bit more time. Just make sure that you stir it, to keep it from sticking to the bottom of the pan.

12Place a rack in the middle position, and preheat the oven to 350f (175c).

13Sprinkle the filets with a bit of salt and pepper, lightly oil a skillet over medium-high heat, and sear the cod for about 60 seconds on each side, then cover with the sauce.

14Place in the oven, and bake until the filets are fully cooked, and flakes easily, about 15 – 18 minutes.

16I like to serve this rustic style, surrounded by bowls of various sides. Enjoy.
