For me, this makes an entire meal. Especially if I add a sliced zucchini to the mix!

Ingredients For scallop kabobs

1 lbsea scallops (about 1 1/2 dozen)

12fresh mushrooms

2 Tbspfresh parsley, minced

2 Tbspvegetable oil

2 Tbsplemon juice
-
2 Tbspsoy sauce
-
1/2 tspsalt
-
1/8 tsppepper
-
12 slicebacon
-
1 lggreen bell pepper, cut into 1-inch pieces

18cherry tomatoes
-
15 1/4 ozcan pineapple chunks, drained (i usually use fresh)

butter, melted
How To Make scallop kabobs

1Cut each scallop in half; place the scallops and mushrooms in a large shallow dish.

2Combine the parsley and the next 5 ingredients; pour over the scallops and mushrooms. Cover and marinade in the refrigerator for 30 minutes, turning once.

3Cook the bacon until limp, but not crisp. Drain, and cut the slices in half.

4Alternate the scallops, mushrooms, bacon, green pepper, tomatoes, and pineapple on 6 15-inch metal skewers.

5Place on a broiler rack in a broiler pan. Broil at high heat 5 1/2 inches from the heat for 4 minutes on each side or until the scallops are opaque, basting occasionally with the melted butter.
