4black grouper fillets (6 ounce each)

1/2 tspkosher salt, divided

1/4 tspblack pepper

1 1/2 Tbspcanola oil

1/3 cradishes, thinly sliced

2 Tbspfresh chives, chopped

2ripe peaches, peeled and cut into 1/2 inch chunks

1serrano chile, thinly sliced

2 Tbspextra-virgin olive oil

1 Tbspfresh lime juice

How To Make sauteed black grouper with peach relish

1Heat a large skillet over medium-high heat. Sprinkle both sides of the fish evenly with 1/4 teaspoon salt and pepper. Add canola oil to the pan; swirl to coat. Add fish to the pan; saute 4 minutes or until golden. Turn the fish over; saute 2 minutes or until the desired degree of doneness.

2Combine the radishes and the next 3 ingredients (through serrano) in a small bowl. Combine remaining 1/4 teaspoon salt, olive oil, juice, and honey in a small bowl, stirring with a whisk.

3Drizzle dressing over the peach mixture; toss gently. Serve relish with fish.
