Ingredients For salmon skewers with lemon, pine nut cilantro sauce

2 Tbsppine nuts

1 1/4 lbskinless salmon fillets, cut into 1 1/2 inch pieces

salt and pepper to taste

1/4 colive oil

1/4 cfresh cilantro, chopped

2 tspgrated lemon zest

4pieces lavash or naan bread
How To Make salmon skewers with lemon, pine nut cilantro sauce

1Prepare skewers if using wooden skewers - soak in water to prevent burning. Preheat grill to medium-high heat or heat oven to 350 degrees F.

2Place pine nuts in a skillet and toast until golden brown. Once cooled, chop the pine nuts.

3Season salmon pieces with salt & pepper and then thread them onto the skewers maintaining a little separation for even cooking.

4Grill, turning occasionally, for approximately 4-6 minutes.

5In a small bowl, combine remaining ingredients and mix well. Serve alongside the salmon along with some toasty bread.
