I make salmon patties all the time out of canned salmon. This time I had some salmon that I grilled and there was just the 2 of us, so had some left over. You could add more or less of whatever you like, I seasoned the salmon in the first place, so didn't add tons of seasonings. You might want to add more mayo if you find the mix too dry. With this I usually make some home made tartar sauce.

Ingredients For salmon patties a la jane #2

12 ozcooked salmon

1/3 cchopped onion
-
1/3 cgreen part of scallions, chopped (for color and bite)

1 lgegg

2 tspminced garlic from jar (timesaver)

1 Tbsphot horseradish
-
1/3 cmayo, more if you want it a little more moist

2/3 citalian bread crumbs to put in the salmon patties

3/4 citalian bread crumbs to roll patties in.

2 tsplemon juice
-
salt and pepper to taste

1 tspdried dill weed.
How To Make salmon patties a la jane #2

1Put all ingredients in a large bowl except the 3/4 cup bread crumbs.

2Make 5 to 6 salmon patties.

3Put the 3/4 cup bread crumbs in a shallow plate, and press the salmon patties on both sides in the crumbs.

4Scatter some of the crumbs on a platter and place the patties on top of them,

5Cover and chill for at least one hour.

6Either heat 1 inch of oil in a fry pan or use a deep fat fryer heated to 350°.

7Cook til both sides are golden brown.

8Serve with home made tartar sauce.
