Ingredients For salmon patties

1 canpink or red salmon, drained, boned and flaked

4eggs, beaten

1 1/2 cplain dry bread crumbs, divided

1/2 cfinely chopped onion

1 Tbspchopped fresh parsley

1/4 tspsalt
-
1/8 tspblack pepper
-
2 Tbspvegetable oil
How To Make salmon patties

1In a large bowl, combine the salmon, eggs, 1 cup bread crumbs, onion, parsley, salt and pepper; mix well. Form into 6 patties about 1/2 inch thick. Place the remaining 1/2 cup bread crumbs in a shallow dish and coat the patties on both sides in a large skillet, heat the oil over medium heat saute the patties for 3 to 4 minutes per side, or until golden brown. Drain on a paper towel-lined platter and serve immediately.
