I ate something similar to this at a little Italian restaurant, and I loved it so much I decided to try to duplicate it. Healthy and yummy!

Ingredients For salmon & pasta primavera

4 mdsalmon, skinless filet
-
1 mdyellow squash, sliced
-
1 mdzucchini squash, sliced
-
1 mdonion, chopped
-
6mushrooms, sliced
-
1/2 mdred bell pepper, sliced in about 2
-
2carrots, sliced
-
1 bunchfresh spinach
-
3-5 clovefresh garlic, either pressed or finely chopped (i use several large cloves because i make a large amount of this recipe and because i love garlic!)

1/2-3/4 cparmesan cheese
-
1 1/2 cheavy cream
-
salt & pepper to taste
-
angel hair pasta
How To Make salmon & pasta primavera

1Slice all veggies and saute' in 2 T olive oil (or more if needed) till crisp/tender. Add salt and pepper to taste.

2Mix cream and Parmesan cheese together, place in microwave safe bowl, and cook on high for about 1 minute.

3Season salmon, if desired, and steam on medium (I use an iron grill), about 20 minutes or till cooked through.

4Boil water and add angel hair pasta.

5When veggies and pasta are done, toss together. Add cream/cheese sauce, and place salmon on top.

6Top with more Parmesan and enjoy!
