I found this recipe in an Atlanta Congregational church cookbook. It is delicious!

Ingredients For salmon loaf

1 canlarge, red salmon ( i use pink)

3eggs,seperated
-
1/2 cancream of mushroom soup
-
3/4 cquick cooking oatmeal
-
1 tsplemon juice
-
1 Tbspchopped onion
-
dashground black pepper
How To Make salmon loaf

1Turn oven on and set at 350* Break canned salmon up with fork.

2Mix yolks with mushroom soup, and add to salmon. Then add pepper, oatmeal and lemon juice and onion and mix well..

3Beat egg whites until stiff and fold into salmon mixture. Put into a large bread pan, or casserole dish, and bake for 1 hour or until done.. Enjoy!
