My family loves this recipe. I usually make this on Friday's after a long week from working. It is quick and easy dinner. I make it with some vegetables and that's it! My dear mother, who passed away, used to make this recipe but I revised it to a healthier version. Enjoy everyone!

Ingredients For salmon & crab meat croquette

1 can14.75 oz salmon without bones and skin

4 ozimitation crabmeat

2 lgeggs
-
1 tsplemon juice

1 tsphoney mustard
-
1/2 tspworcestershire sauce

1/4 cchopped green peppers
-
1/4 cchopped red peppers
-
1/4 cchopped onions
-
1/3 cchopped scallions
-
1 citalian bread crumbs and some for coating

1/2 ccorn meal
-
1/4 cshredded sharp cheddar cheese
-
dashsalt and pepper
-
dashold bay seasoning
-
1/2 colive oil
How To Make salmon & crab meat croquette

1In large bowl mix the above ingredients together. Except the Olive Oil.

2Form into balls and pat down. Makes about 7 croquettes. Coat with Italian Bread Crumbs.

3Put Olive Oil in Non-stick Fry pan. Heat Olive Oil Medium to Low Heat then place the 7 croquettes in hot oil.

4Cook approximately 2 to 3 minutes on each side until golden brown. Drain on Paper Towel.
