When my mom would make this, us kids used to race to be the first to get the 'bones' out of the salmon. mmm good! Now my son does the same thing! And the smell while its cooking..is heaven. Served with lemon..Perfect Salmon Casserole!

Ingredients For salmon casserole

1 can14.75 oz. can of pink salmon
-
1/4 cminced onion
-
10 to 15 slicewhite or wheat bread chopped or broken up
-
milk
-
fresh lemon or juice
How To Make salmon casserole

1Open the can of salmon, drain the liquid into a 1 cup measuring cup, set aside.In a bowl, remove as much bone as you can, breaking up the fish as you go. Remove the skin if you like.Next put the fish in a large mixing bowl. , set aside. Then take 10 to 15 slices of bread and tear it up into the bowl. Toss it with the fish. Then ad the minced onion, toss lightly. Now take the liquid from the can that you set aside earlier, and add enough milk to it to make a full 1 cup. Pour the liquid over the bread,fish and onion mixture. Toss lightly til its all mixed. Dont mash it together,if possible.

2Lightly grease a 2 quart casserole dish or 2 regular sized bread pans. Put the casserole in the pans lightly, dont mash it in.

3Place in a preheated oven thats 350 degrees, for 1 hour. Times may vary. Check the casserole in the last 10 or 15 minutes, and remove it when the casserole is golden brown on top. Serve with fresh lemon wedges or lemon juice & ENJOY!
