This is one of my toddler's favorite food. She likes it without salt, though. It's good for snacking too. To make it easy, freeze salmon for about 30 minutes prior processing in food processor.

Ingredients For salmon-carrot nuggets

12 ozsalmon fillet

3/4 cfinely shredded carrot

1 tspsodium-free chicken bouillon granules

1/2 tspgarlic powder

1/2 tsponion powder

1 tspminced italian parsley

1 tspminced chives
-
1/4 tspsalt
-
1/8 tspground white pepper

1/2 cyellow cornmeal

2 Tbspvegetable oil
How To Make salmon-carrot nuggets

1Cube salmon fillet and put in food processor; process until nearly smooth. Transfer to a bowl; add the next 8 ingredients (carrot through white pepper). Stir until well combined. Shape into nuggets. Roll nuggets in cornmeal

2Heat oil in non-stick skillet over medium heat. Add nuggets; cook about 3 minutes per side or until lightly browned
