My wife is allergic to seafood so I use Salmon in place of jumbo lump crab meat.

Ingredients For salmon cakes

  • 4 lb
    salmon, canned
  • 1 md
    red pepper finely diced
  • 1 md
    yellow bell pepper finely diced
  • 1 md
    green pepper finely diced
  • 1 lg
    onion minced
  • 3 md
    ribs celery minced
  • 4 md
    eggs
  • 1/2 c
    mayonnaise
  • 2 Tbsp
    lime juice
  • 1/3 c
    butter melted
  • 1 Tbsp
    yellow mustard
  • 1 Tbsp
    worcestershire sauce
  • 2 Tbsp
    old bay seasoning
  • 2 c
    panko bread crumbs or enough to hold the cakes together

How To Make salmon cakes

  • 1
    Mix all ingredients except the salmon and bread crumbs.

    Then fold in the salmon and bread crumbs.

    Form into patties and saute or bake until hot all the way through.
  • 4
    We like to serve on a salad or brown rice.
