A good friend told me the secret to his salmon patties--fresh rosemary. I incorporated it into my own salmon patty recipe & the whole family loves it! This is practically the only way, my 8-yr old will happily eat fish.

Ingredients For rosemary salmon-veggie patties

1 cansalmon, canned
-
1 mddiced red onion or sweet onion

1 cshredded zucchini
-
1/2 cbread crumbs or instant mashed potatoes

2eggs
-
1-2 Tbspfresh rosemary, minced (or 1 tsp dried)

1 clovegarlic, minced
-
salt & pepper to taste

1-2 Tbspoil or butter
How To Make rosemary salmon-veggie patties

1Combine all ingredients, except oil or butter, in large bowl and mix well. Add more bread crumbs or instant potatoes if the mixture feels too wet.

2Heat oil or butter on medium heat in large skillet or griddle. Scoop out about 1/4 cup of mixture and press onto skillet to form each patty.

3Working in batches, cook patties for about 5 minutes on each side until browned.

4Serve with tartar sauce, mayo, or spicy mustard.
