I had these little baby squids didn't want to do the usual flour and deep fried ,therefore I knew of a red sauce, and excited to try went for it, never realizing i had no pasta! but only one box of jumbo shells.Well i decided to break apart each shell into 3 part and cooked it directly in the sauce and the rest is history .Give it a try its really good.

1 lbsquid, cleaned and sliced(baby pulpo)

1 mdshallots

1/2 cred onion

3 clovegarlic

3 Tbspolive oil

2 cfresh tomatoe puree sauce

1/2 cwater
-
1/2 cpeccorino cheese ,diced

1 pinchsalt and pepper
-
2 pinchoregano,dried

2 pinchthyme, dried

2 pinchbasil, dried

2 pinchred pepper flakes

3/4 lbpasta,jumbo shell break into 3 parts

3 pinchparsley, italian
How To Make pulpini con sugo. (baby squids with red sauce)

1In a deep skillet saute' in olive oil shallots,onion and garlic until soft.Add tomato sauce ,dried seasoning ,salt&pepper.

2Cook for 30 min.to 40 min on medium heat until sauce is ready to be used .Add Pulpini and cook on med. to low heat for 5 min, remove and set aside .To the sauce add your dried cut up pasta ,cover with a tight fitting lid to create steam .Cook ,stirring few time ,for 30 min al dente .

3Uncover ,add Pulpini(squids),pecorino cheese,cover and finish for 2 min. more Serve and sprinkle some chopped Italian parsley for presentation.
