I clipped this recipe from the local newspaper 20 years ago,we loved it and I've been making it ever since. Use your favorite fish,I love halibut,sea bass or any white firm fish. It's really delicious. Great served with rice and a vegetable or salad.

Ingredients For pescado a la naranja (orange fish)

2 lbs fish fillets

1/2 c finely chopped onion

2-3 cloves garlic,minced

2 t. oil

2 t. minced cilantro

1 t. salt
-
1/8 t. pepper
-
1/2 c orange juice
-
1 t. lemon juice
-
1 hard cooked egg,cut in wedges

paprika
-
orange slices
How To Make pescado a la naranja (orange fish)

1Arrange fish in a baking dish.In small skillet cook onion and garlc till onion is tender but not brown.Stir in cilantro,juices, salt and pepper.Spread mixture over fish.Bake,covered in 400 deg oven 20-25 mins.Arrange egg wedges atop fish.Sprinkle with paprika and garnish with orange slices.
