Ingredients For pam cheree tuna cake cobb mini's

    sandwich thin wholewheat mini's
  • TUNA CAKE
  • 2 can
    tuna, packed in water (albacore tuna fillet)
  • 1/3 c
    panko bread crumbs
  • 1 lg
    egg
  • 2-3 Tbsp
    mayonnaise
  • 1/2 sm
    onion chopped
  • 1 1/2 Tbsp
    sun dried tomatos, chopped
  • 1 md
    celery stalk, chopped
  • 2 tsp
    greek seasoning
  • 1 tsp
    black pepper
  • TOPPINGS
  • 1 sm
    avocado, sliced (add a little lemon juice)
  • 8 slice
    bacon, cooked
  • 2 sm
    roma tomatoes, sliced
  • 1 sm
    cucumber, sliced
  • TOMATO BLUE CHEESE SPREAD
  • 1/4 c
    mayonnaise
  • 1 Tbsp
    tomato paste
  • 2 oz
    gorgonzola cheese, crumbles

    in a neduim sized bowl combine all tuna cake ingredients

    add olive oil to a heated skillet, fry patties 2-3 minutes on each side

    in a small bowl combine tomato blue cheese spread ingredients. Build your mini's: spread tomato blue cheese spread on all slices of bread...add bacon, tomato, avocado, a tuna cake, cucumber slices and top with bread slice. Enjoy!
