Ingredients For oyster casserole

6 Tbspfat

3eggs, hard boiled and sliced

24oysters, raw with juice

2 cmilk
-
1 dashcayenne pepper

1 tsppaprika

1 tspsalt

4 Tbspall purpose flour

1/4 lbmushrooms, freshly sliced

1/2 smonion, sliced

2 Tbspcooking sherry
How To Make oyster casserole

1Heat fat, add onions and mushrooms; cook until tender and remove from pan.

2Blend flour with fat, add seasonings, let boil 2 minutes and add milk gradually.

3Cook oysters in their own liquor until edges curl and add oysters and liquor to creamed mixture.

4Add mushrooms, onion and eggs; stir in sherry.

5Turn into greased casserole and bake at 400 for 15 minutes; serve on toast or pastry shells.
