this is my all time favorite "baked fish" dish. we served a prepared "cod almondine" when I worked at the school, and I applied what I thought to orange roughy. It is delicious.

Ingredients For orange roughy almondine

4 ozorange roughy filets ( or more)

1 sliceday old bread, for crumbs

1/2 tspeach garlic salt, pepper, salt

1 Tbsplemon juice

1 tspmelted margarine

1/8 cthin almond slices
How To Make orange roughy almondine

1spray a shallow baking pan with cooking spray, or use non-stick foil (which I prefer)

2lay fillet on pan. sprinkle lemon juice over fillet, then the seasonings.

3melt margarine and toss with bread crumbs. sprinkle over fillet.

4place almonds on top of crumbs.

5bake at 350 degrees, covered with foil the first 10 minutes, then remove foil and bake an additional 20 minutes until fish is flaky and crumbs are golden.

6NOTE:

7you can use prepared bread crumbs and also use the new "butter spray" if you are watching your calories more closely. I've used both.And this works with any "baked fish" tilapia, cod, alaskan pollock.
