Ingredients For orange marinated salmon fillets

2-3 lbfresh salmon, filleted
- MARINADE:

1/3 cfat-free italian dressing
-
1/3 corange juice, unsweetened
- SAUCE:

2 Tbspminced onion
-
1 Tbspyellow mustard
-
1/2 tspminced garlic
-
1/2 tspchili powder
-
1 1/2 Tbspolive oil
-
1/2 cfat-free italian dressing
-
1 corange juice, unsweetened

salt and pepper to taste
How To Make orange marinated salmon fillets

1Combine the marinade ingredients in a shallow pan or zip-lock bag big enough to contain the amount of fish you are preparing. Place fish and coat well with marinade, allow to rest in the fridge for at least 1 hour.

2In a small saucepan reduce 1 cup of orange juice over low-medium heat until it thickens and becomes syrupy. It will reduce to about 1/4 cup.

3In the meantime, combine the remaining ingredients (except dressing) in a food processor and pulse until it becomes pasty.

4Add the paste to the syrup and stir until hot. Let mixture cool for 2-3 minutes then return it to the food processor and blend.

5Slowly drizzle in the Italian dressing until completely combined.

6Spray a baking dish with Pam and place fillets skin-side down. Drizzle the sauce evenly over the until well coated. Bake uncovered for 15-20 minutes or until flaky.

7Broil 2-3 minutes to caramelize the sauce if desired.
