Strangely, this was my Dad's favorite thing to eat, growing up with stew Oxtail.It did not matter the amount, there was never enough to go around, especially when neighbors stopped by "to say Hi" more to eat some food! if you ask me.

Ingredients For ochro & rice salt-fish delight

6 mdochros sliced horizontally

1 cof parboiled brown rice

1 smonion finely chopped

3 clovegarlic finely chopped

1 cpumpkin, cubed

1 ccarrots, cubed
-
1/2 csaltfish, shredded

3pimentos peppers
-
1/2 tspfresh, oregano,

1/2 tsprosemary sprigs finely chopped

1/2 tspcrushed, ginger
-
1 cwater
-
1 ccoconut milk
-
1/2 tspred pepper flakes
-
1 pinchsalt and pepper
-
1sprig of lemon grass pounded and finely chopped
How To Make ochro & rice salt-fish delight

1In a sauce pan saute onions, garlic, ginger, peppers,lemongrass,carrots, pumpkin and ochros. Until slightly tender, add rice, water simmer for 5 mins with lid on.

2Remove lid and add coconut milk, pepper flakes, water, oregano, rosemary and salt fish stirring ever so gently add salt and pepper to taste.I usually serve this with a simple green salad and hot sauce on the side.

3I know a lot are into healthy eating,but I find this dish is incomplete with (Golden Ray Cooking Butter). You may choose not to use it, but I have and it taste heavenly.With or without makes no difference to your taste buds I promise ♥
