Are You tired of same tuna noodle casserole! Found this in old cookbook thought it would be nice for a change. Especially for a lent dinner. Very tastey!

Ingredients For not your norm tuna noodle casserole

  • olive oil
  • 2 clove
    garlic
  • 1 c
    olives chopped (mix of back and green)
  • 1 can
    14.5 chopped tomatoes w/juice
  • 1/2 c
    jarred roasted tomatoes
  • 2 can
    5oz tuna in oil drained slightly
  • 2 Tbsp
    fresh chopped flat leaf parsley
  • 1 lb
    penne pasta

How To Make not your norm tuna noodle casserole

    Bring salted water to boil for pasta. Cook adente, saving 1/2 cup pasta water for sauce.

    In large frying pan, add olive oil, chopped garlic, cook til fragrant. Do not brown. 3-4 min. Stir in olives and peppers cook for another 10 minutes on low.

    Turn heat to med-high. Add tuna, breaking up,add tomatoes. stiring occationally. bring to boil. Turning heat back down to low, cook for five to ten minutes till sauce thickens. Add parsley. Add drained cooked pasta and any water if needed for sauce. Cook another 5 minutes and enjoy!!!
