1 lborange roughy or other white fish fillets, cooked and flaked

1 lgegg, lightly beaten

2-3 Tbspfresh parsley, minced

1/2 tspdry mustard

1/4 tspsalt

1/8 tspblack pepper

1/2-3/4 citalian-seasoned breadcrumbs

2 Tbspbutter

1 Tbspolive oil
How To Make north shore fish cakes

1Saute green onions in 1 to 2 tablespoons butter in a large skillet over medium heat until tender. Set aside.

2Combine the mashed potatoes, 2 tablespoons butter, and sour cream in a medium bowl; stir well. Add fish, stirring gently. Set aside.

3Combine the egg and the next 4 ingredients in a bowl; stir in the reserved green onions. Add to the fish mixture; stirring gently.

4Shape fish mixture into 8 patties. Dredge in the breadcrumbs. Fry patties in 2 tablespoons butter and olive oil in a large skillet over medium-high heat for 3 minutes on each side or until ightly browned.
