Hushpuppies are fried seasoned cornmeal balls that Louisiana residents love to eat with any type of fish, especially fried catfish! The legend says that the name came from Southerners frying fish outdoors and their dogs yappinhg for handouts. They would throw these lumps of fried cornmeal to their dogs and yell, "hush puppies!" Don't know how true this is but it IS a cute legend! This hushpuppy recipe came from a resident that I had at a long term care facility. Thanks Mr. Loudon, I love this!

Ingredients For mr. loudon's hushpuppies

  • 1
    onion
  • 1
    jalapeno peppers
  • 1 c
    corn meal
  • 1/2 c
    flour
  • 3 Tbsp
    ice water
  • 1/2 tsp
    salt
  • 1 tsp
    sugar
  • 1
    egg

How To Make mr. loudon's hushpuppies

  • 1
    Mince onion and jalapeno pepper in food processor.
  • 2
    Mix with corn meal, flour, ice water, salt, sugar and egg to batter consistency.

    Drop by spoonfuls into hot oil. Cook until golden brown. They will float to top when done.
