    eggs
  • 1 c
    milk
  • 2 c
    crushed saltine crackers
  • 1 c
    onion, diced
  • 1 c
    spring onions, chopped
  • 2 clove
    garlic, minced
  • 1/2 c
    monterey jack cheese, shredded
  • 1/2 c
    sharp cheddar cheese
  • 1 c
    red bell pepper, sliced
  • 1 lb
    small shrimp, peeled, deveined & tails off
  • 2 Tbsp
    butter, melted
  • salt & pepper, to taste
  • parsley, to taste

How To Make *** mom's breakfast shrimp casserole ***

    Preheat oven to 350 degrees F.

    Whip milk & eggs, pour in bowl. Add crackers, onions, garlic, cheeses, bell pepper, shrimp, salt, pepper & parsley; mix well. Put into greased 9 x 12" pan. Pour butter over. Bake 30 minutes.
