2-3 lbsalted drum or seal mullet

4 mdpotatoes, irish

2 lgonions, diced

3 slicesalt pork

How To Make minced fish

1Soak salted fish overnight; changing water several times. Boil fish and flake.

2Fry-out fat pork in a cast iron Dutch oven. Peel and wash potatoes and onions; dice. Place in pot with fat pork grease; add water to cover, and salt and pepper. Boil until potatoes are soft. Add 3 cups flaked fish. Cook about 30 minutes or until almost dry. Serve with fried cornbread.
