This jaiba recipe was given to me by my niece, who immigrated to the U.S from a state in Mexico called Michocan. She is a fabulous cook and has shared many of her Mexican recipes with me. I am sharing this recipe with my friends from JAP who love Mexican food. This is a simple, refreshing and authentic Mexican delicious dish. I know you will just love this when you try it. I really like it during warm weather, especially with an ice cold Corona beer rimmed with salt and lemon. Yum, I bet you wont resist eating just one. Enjoy. 16 ozcrabmeat, shredded

1 pkg14oz tostadas

3/4 cfinely diced onions

3/4 cfinely diced fresh tomatoes

3/4 cfinely diced cilantro

5romaine lettuce leaves, finely shredded

1 or 2chili serrano, deveined and deseeded, finely diced for spiceness (optional)

1 cmccormick mayonnaise/ mayonasa

1 tspkoser salt
-
1/2 tspblack pepper
-
1 lgavocado, slilced in wedges

tabasco sauce or homemade salsa

How To Make mexican crab tostadas (tostadas de jaiba)

1In a medium bowl, place the crabmeat, onions, tomatoes, cilantro, lettuce. chili serranos (optional) and toss.

2Add salt, and pepper, and toss.

3Add Mayonnaise and fold into the above. THE SECRET TO THE THESE TOSTADAS IS THE BRAND OF "McCORMICK" MAYONNAISE/(MAYONASA MEANS MAYONNAISE). THIS IS THE MEXICAN VERSION. THIS MAYONNAISE IS FLAVORED WITH LEMON AND LIME JUICES. THIS MAYONNAISE CAN USUALLY BE FOUND IN HISPANIC MARKETS. I HAVE TRIED USING OTHER BRANDS, AND THE FLAVOR IS NOT THERE AT ALL. MAKE SURE YOU USE "McCORMICKS' BRAND. THIS IS WHAT GIVES IT A BANG.

4Place 1 to 2 tablespoons of mixture on top of a tostada, top with 2 wedges of avocado. The tostadas can be additionally topped with chili Tapatio, or your own home made salsa. you can also add a few dribbles of catchup. These can be combined or separate, according to your taste.
