This is a super fast dish to make any night of the week. It goes great with pasta, rice, polenta or couscous. Some crusty bread is lovely when dipped in the remaining oil from the pan.

Ingredients For mediterranean cod fish

  • butter flavored cooking spray
  • 6
    cod fish fillets
  • salt and pepper, to taste
  • 1/2 tsp
    coriander
  • zest of 1 lemon
  • 1/2 tsp
    paprika
  • 1
    lemon, thinly sliced
  • 2 clove
    garlic, thinly sliced
  • 2 Tbsp
    capers
  • 3 Tbsp
    olive oil
  • fresh cilantro leaves (or chopped fresh parsley, if preferred)

How To Make mediterranean cod fish

    Preheat oven to 400 degrees.

    Spray 9x13 glass baking dish with butter flavored cooking spray.

    Pat fish dry and place each fillet in baking dish.
  • 4
    Sprinkle fish evenly with salt, pepper, coriander, lemon zest and paprika.

    Place a lemon slice on top of each fillet.

    Sprinkle sliced garlic and capers over top of fillets. Drizzle with olive oil.

    Bake uncovered for 15 minutes or until cooked through and flakes easily.

    Plate and sprinkle with fresh cilantro leaves or chopped parsley.

    I like to serve this over fried polenta slices or parslied pearl couscous, but rice or pasta works nicely as well!
