Ingredients For low fat seafood stew

1garlic clove

pinchpepper

pinchsalt

pinchcayenne pepper

1/4 lbshrimp, cleaned and deveined

1bay leaf

1/4 lbscallops, in 1" pieces

2.5 ctomatoes, canned and chopped, with liquid

1/4 lbcod, cut in 1" cubes

1/2onion, chopped

1/2 tspthyme
-
1/8 tspfennel seed, optional
How To Make low fat seafood stew

1Combine tomatoes, garlic, onion, and seasoning in saucepan; simmer for 10 minutes.

2Add cod and simmer gently for 2 minutes, add scallops and simmer 2 minutes, add shrimp and simmer 3-5 minutes, just until shrimp turns pink.

3SUBSTITUTIONS: May use basil or oregano in place of thyme. Use any white, firm-fleshed fish for this recipe... Does not have to be cod.
