Ingredients For louisiana shrimp bake

1 ccelery, diced
-
1-med.onion, chopped
-
1/2 cgreen pepper, chopped

1/4 cbutter
-
1/4 cflour
-
1 1/2 tspsalt
-
1 lbcanned "crushed" tomatoes
-
7 - oz. pkgfrozen shrimp
-
1/4 ccooking sherry
-
1 1/2 ccheddar cheese, shredded
-
4hard boiled eggs, sliced
-
3 ccooked rice
How To Make louisiana shrimp bake

1Saute celery, onion & green pepper in butter. Blend in flour & salt. Cook until bubbly.

2Stir in tomatoes,shrimp & sherry. Bring to boil; simmer covered for 10 minutes.

3Stir in "1/2 cup" cheese & eggs. Pour into a 2 quart casserole dish.

4Top with rice, sprinkle with remaining cheese.

5Bake at 375 degrees for 25 to 30 minutes.
