2Notes: A wonderful way to prepare is to grill instead of broil. A ridged grill makes this a treat even indoors This goes great with asparagus spears or Wilted Greens I've seen varations of this recipie in a number of places, and only eastern European catalogs even refer to the "Petrograd" part (after the old Russian Imperial capital). Why? Perhaps because it was considered a treat of the affluent (read nobility) with the oranges and pepper sauce. Remember that when this recipie was created, salmon was considered "junk" fish and unfit for "refined" tastes - thus it had to be "dressed up" with this wonderful sauce.
