We have been eating this almost 50 yrs. Usually the day after Thanksgiving since my family still doesn't like Turkey. It came from a resturant in Yorktown, Va. Where many famous people have eaten. Elizabeth Taylor, Winston Churchhill and I can't rember any more, but there where many.

Ingredients For lobster dien bien

  • 2 lb
    fresh lobster meat
  • 1/2 tsp
    pepper
  • 1/3 tsp
    salt
  • 6 oz
    butter
  • 2/3 c
    scallions chopped
  • 1
    diced green pepper
  • 1 1/4 c
    fresh mushrooms
  • 1/2 c
    uncle ben's rice
  • 3
    ripe tomatoes
  • 2/3 c
    chicken consomme
  • 1 tsp
    tarragon
  • 1/2 tsp
    pepper

How To Make lobster dien bien

  • 1
    Cut lobster into small pieces, then brown 4 ozs. of butter in pan. Partly brown lobster in butter, making sure that butter is hot enough so lobster retains it's juices.

    Chop scallions green pepper, and mushrooms, add to Lobster. Simmer 5 minutes. Add rice, stirring continuously, until rice is loose.

    Add tomatoes chopped fine, add consomme. Stir once and cover. Simmer about 25 minutes, then remove from heat.

    Put remaining 2 oz. of butter in pan and brown evenly, then add tarragon and pepper.

    pour over lobster, mix well and serve immediatly.

    This recipe can also be used with shrimp or chicken. Instead of lobster.
