This lemon pepper Panko crusted fish is an easy summer dinner. Double crusting the fish filets in a mixture of lemon pepper bread crumbs, potato flakes, and Parmesan cheese gives them a nice and crunchy crust. Inside, the fish is tender and flaky. Ready in no time, it's a light and impressive meal.

Ingredients For lemon pepper panko crusted fish

  • flour for dredging fish
  • 1/2 tsp
    salt or to taste
  • 1/2 tsp
    pepper or to taste
  • 4 - 6 md
    haddock filets, cod filets, or other firm white fish
  • 1 lg
    egg, beaten
  • 1 Tbsp
    water
  • 1 c
    lemon pepper Panko crumbs
  • 1/4 c
    instant potato flakes, dry
  • 1/4 c
    Parmesan cheese, grated
  • olive oil for frying, 1/4 inch depth

Can't find lemon pepper Panko crumbs? Just add 1 Tbsp of lemon pepper to 1 cup of plain Panko crumbs.
  • Add fish to a bag with flour, salt, and pepper.

    Place flour in a plastic bag. Add salt and pepper to your liking, about a 1/2 tsp of each. Add fish filets and shake to coat.
  • Mix egg and water in a shallow dish.

  • Add Panko crumbs, potato flakes, and Parmesan cheese to a shallow dish.

    In a separate dish, mix lemon pepper Panko, potato flakes, and Parmesan cheese.
  • Dip fish in the egg.

    Dip the filets in the egg wash.
  • Coat alls ides of the fish in the Panko mixture.

    Then coat the filet in Panko mixture on all sides.
  • Repeat back into the egg.

  • Coat again in the Panko crumbs.

    Then into Panko crumbs once more. Set aside and coat remaining filets.
  • Fry one side of the fish for 3 minutes.

    Put olive oil in a fry pan and heat on medium high. Fry fish for about 3 minutes.
  • Fry second side until golden brown.

    Flip and fry the other side for 3 - 4 minutes or until the fish is golden brown and crunchy.
  • A platter of Lemon Pepper Panko Crusted Fish.

    Remove to a plate. Serve with tartar sauce and lemon wedges.
