"I had a friend that had brought me some Orange Roughy Fish one time. Hence the name, I decided upon prepare this fish in a citrus marinade. Turned out tender and flaky. Very delictable & nutritious. Can also be grilled on the grill."

Ingredients For le orange roughy

4- 6 ozorange roughy filets

1- 4 ozcan frozen orange juice

1 tsplemon juice (or juice of real lemon)

1 tsplime juice (or juice of real lime)

1/2 tspminced garlic

1 Tbspmrs. dash onion & herb

1 Tbspmrs. dash table blend

lrg. mixing bowl
-
lrg. ziploc bag (gallon size)

9 x 11 inch baking pan

How To Make le orange roughy

1In a bowl, combine the thawed orange juice, lemon juice, lime juice, minced garlic, Mrs. Dash Onion & Herb, and Mrs. Dash Table Blend together. Pour marinade in the ziploc bag, place the 4 orange roughy fillets in the bag and close bag, releasing some air. Completely saturate the fillets in the bag with the marinade.

2( I like to prep this the night before so the fish can marinate overnight, enhancing the flavor.)

3Preheat oven to 425* F. Place the Orange roughy in the 9x11 inch pan w/ all the marinade. Cover the pan with the foil tightly. Place in the oven and bake for 45 minutes. Serve w/ a sprig of mint.
