The first time I had fish tacos,my family and I were in Ensenada,we went to the fish market early one morning and passed by an area where they make great fish tacos,the cooks were starting their day,chopping vegetables for all kinds of salsas,cooking the seafood,etc. After we bought fish,we sat down at one of tables and ate the best fish tacos ever! Ever since,I've been making fish tacos at home. this is my version. I like to spread fish with a little yellow mustard for extra flavor,you don't really taste mustard,just makes the fish flavorful.

Ingredients For lad's fish tacos

flour

salt and pepper

ice cold water

liquid hot sauce,like texas pete

flour

yellow mustard

any fresh,fish,cut in strips. i like halibut,cod or snapper

canola oil

corn tortillas
-
sour cream
-
cabbage, thinly shredded

avocado,sliced,sprinkled with lemon juice,salt and pepper
-
pico de gallo,preferably homemade
-
cilantro,chopped
-
green salsa
-
lemon wedges
How To Make lad's fish tacos

1Make batter of flour,salt and a few shakes of hot sauce and enough cold water to make a batter the consistency of pancake batter. Heat oil in deep cast iron skillet. Lightly season fish with salt and pepper,spread with mustard,dip in flour then in batter. Fry fish until crispy in oil. Dip tortillas in hot oil 1-2 seconds just until soft enough to fold. Drain well. Place fish into tortillas and fill with all the trimmings or just your favorites.
