This recipe comes from Tracton's in Los Angeles. It's swimming in garlic flavored butter. If the amount horrifies you, you can cut down on it,but it's great their way!

Ingredients For hot buttered scampi

  • 1 lb. butter, clarified
  • 1 tbsp. minced garlic
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 1/2 lbs. large shrimp, shelled and deveined

How To Make hot buttered scampi

  • 1
    Heat 3 Tbsp. butter in large skillet. Add garlic and saute. Add salt and pepper and the shrimp, which can be butterflied, if desired. Saute til shrimp change color and are tender. Add remaining butter and heat through. Place shrimp on plates and spoon hot butter over. Makes 4 to 6 servings
