We love this recipe, a wonderful way to marinate Salmon, then bake in the oven, or grill on the BBQ, whatever works, it is all good. Serve with rice pilaf, a green salad, and some grilled or steamed Asparagus (or steamed Artichoke). My hubby fished commercially in S.E. Alaska for two years, and this is one of his fave recipes for cooking Salmon.

Ingredients For honey-lime-balsamic salmon

1 lbfresh salmon filets
-
2 Tbspbutter
-
3 to 4garlic cloves, minced (or grated finely)

1/4 c"nice" white wine (something you'd actually drink!!)

2 Tbsphoney
-
1/4 cwhite balsamic vinegar (or red)
-
juice of one lime
-
1/4 tspzest from one lime
-
4 tspdijon mustard
-
1 tspground oregano
-
salt and ground black pepper to taste
How To Make honey-lime-balsamic salmon

1Preheat oven to 400 deg. F. (or heat Barbecue grill). Line baking pan with foil (or spray grates of grill with non stick spray).

2In sauce pan, mix butter, garlic, and wine. Simmer for 3 minutes over medium heat. Add honey, balsamic vinegar,lime juice, lime zest, dijon and oregano plus salt and black pepper. Simmer over medium high heat for 4 minutes.

3Place salmon filet(s) in baking pan. Pour marinade over. Marinate for 30-50 minutes.

4Bake fish for 15 minutes in oven until fish flakes easily with a fork. (or grill until cooked through). Remove from foil and serve with rice, cooked asparagus and a green salad (and french bread!)
