These herb-marinated shrimp will be delicious all summer long. They are filled with fresh basil, oregano, and garlic flavors. Grilling adds a slight char to the shrimp and enhances their flavor. Enjoy as a meal or a snack.

Ingredients For herb marinated shrimp

1/3 cfresh basil

2 Tbspfresh oregano

1/2 tspsalt

1/4 tsppepper

1 1/2 lbshrimp, large and peeled
How To Make herb marinated shrimp

1Start by pre-soaking wooden skewers. If using metal or broiling, you skip this step.

2Combine the basil, oregano, salt, pepper, and garlic in a food processor. Pulse until the mixture is coarsely chopped.

3Add olive oil.

4Process until well blended.

5Combine herb mixture and shrimp in a large resealable bag and toss to coat. Marinate shrimp in the fridge for 30 minutes. Marinating any longer than 1 hour can result in rubbery shrimp. Preheat the grill. If broiling, start preheating the oven.

6Remove shrimp from the bag and thread onto skewers, you should have at least 6 shrimp to a skewer. Place skewers on a grill rack coated with cooking spray.

7Grill for three minutes on each side. DO NOT overcook or the shrimp will be dry and chewy.

8I like to serve these with flavored rice and a salad.
