Ingredients For halibut in parchment paper

2halibut fillets (6-8 oz each)

2 Tbspbutter

2 tspchopped fresh parsley

1/2red onion, finely sliced

1zucchini, finely sliced

1yellow squash, finely sliced

1 lgtomato, quartered
-
salt, to taste
-
freshly ground black pepper, to taste

2pieces parchment paper (12-inches square each)
How To Make halibut in parchment paper

1Preheat oven to 375 degrees.

2Toss together the parsley, red onion, zucchini, yellow squash, tomato and salt and pepper. Place each halibut filet on a piece of parchment paper and top with vegetable mixture. Place 1 tablespoon of butter on top of each.

3Fold halibut in parchment paper and roll edges to seal. Place on a sheet pan and cook for 20 to 25 minutes.
