Ingredients For gulf crabcakes (sallye)

1 lblump crab meat

1egg

1/2 cmayonnaise

1/2 cbread crumbs

1/4 conion, finely chopped

1/4 cchopped red and green bell peppers (optional)

1 tspworcestershire sauce

1/8 cchopped cilantro (optional)

1/2 tsptabasco sauce

1 Tbspoilve oil

1 Tbspbutter

salt & pepper to taste
How To Make gulf crabcakes (sallye)

1Carefully pick through the crab meat and remove any shells or cartilage In a mixing bowl, break up crab meat gently with a fork (do not overdo or cakes will be "mushy"

2Place all other ingredients in with the crab meat and blend with a fork until well mixed. Again, take care not to overmix the crab meat

3Heat butter and olive oil in a heavy skillet over medium heat Form crab cake mixture into 2" patties and place in heated oil Brown one side, then place under broiler with unbrowned side toward the broiler for 2 minutes Any extra cakes can be frozen for later use
