2 Tbspbutter, unsalted

1 lgonion, diced

3 clovegarlic, minced

4 cpeaches, fresh, peeled, pitted & diced

1/2 cketchup

1/4 corange juice, fresh

1/2 tsporange zest
-
2 Tbsplemon juice, fresh

2 Tbspapple cider vinegar

3 Tbsplight brown sugar

4 Tbspsouthern comfort (aka peach bourbon)

salt & pepper, to taste
-
4salmon fillets
-
2 tspolive oil, extra virgin

brown rice, cooked
How To Make grilled salmon w/ peach bourbon bbq sauce

1PEACH BOURBON BBQ SAUCE: Melt butter in medium saucepan over medium heat. Add onions & cook, stirring occasionally, until translucent, about 5 minutes. Stir in the garlic & cook for 2 minutes. Add peaches & cook until softened, about 5 minutes. Add the ketchup, orange juice, zest, lemon juice, cider vinegar & brown sugar & stir to combine. Bring mixture to a simmer & cook for 30 minutes or until thickened. Using a immersion blender, puree the sauce until smooth. Stir southern comfort into bbq sauce & set aside until ready to use.

2Preheat grill to medium heat.

3FISH: Brush the salmon on all sides with olive oil & season with salt & pepper. Place the fish on the grill & cook for 2 minutes. Turn fish on 45 degree angle & cook additional 2 minutes. Do same after turning fish. During the last few minutes of cooking, brush the fish with reserved peach bbq sauce.

4Serve over rice & with remaining peach bbq sauce.
