Ingredients For grilled margarita grouper

1.5grouper filets

1 dashsugar
-
2 Tbspcilantro, chopped

1 Tbspjalapeno peppers, chopped

1onion, chopped

3tomatoes, chopped

1 Tbspvegetable oil

2 lggarlic cloves, crushed

1 tspsalt
-
3/4 clime juice
-
1/2 ctriple sec
-
1/3 ctequila
-
pepper, freshly ground
How To Make grilled margarita grouper

1Place fish in a dish large enough to hold it in a single layer and combine tequila, triple sec, lime juice, salt, garlic and 2 teaspoon oil and pour over fish, rubbing all over.

2Cover and marinate for 1/2 hour at room temperature or up to 3 hours in the refrigerator, turning occasionally.

3Just before serving, combine tomatoes, onions, chiles, cilantro, sugar and salt to taste.

4Heat the grill to very hot.

5Remove fish from marinade, pat dry (reserving marinade) and brush lightly with 1 teaspoon oil and grind pepper over the surface.

6Cook on a greased grill for about 4 minutes per side or until flesh is opaque.

7Meanwhile, boil marinade in saucepan for 2 minutes, remove and discard garlic cloves, and spoon a little of it over the fish, spoon the tomato salsa alongside and serve.
