Ingredients For grilled fish in foil packets

4(5- to 6-oz.) boneless skinless fish fillets, such as tilapia

1/4 tspsalt

1/4 tsppepper

2(4x1/2-inch) strips orange peel, cut into thin slivers

1 Tbspslivered fresh basil

3plum tomatoes, chopped (about 1 1/2 cups)

1/4 cfinely chopped red onion

1 Tbsporange juice
-
1 Tbspolive oil
How To Make grilled fish in foil packets

1Heat grill. Cut 4 pieces of heavy-duty foil into 14-inch squares. Place 1 fish fillet in center of each square. Sprinkle with salt and pepper; top with orange peel and basil.

2Combine all remaining ingredients in small bowl; spoon over fish.

3Fold foil over fish, making a tight double fold in center and on each end to close securely. Grill, covered, over medium heat or coals 8 to 12 minutes or until fish just begins to flake. Let stand 5 minutes. 4 points per serving
