Ingredients For garlic brown butter cod & strawberry salsa
- SALSA

1/2 ptstrawberries, chopped

1 smred onion, chopped

1/4 cuncle gary's gourmet peppers chopped plus 1 tbsp juice-or favorite sweet peppers rings

1 smjalapeno pepper, chopped *optional*

2 Tbspchopped cilantro
-
1 Tbsplime juice
-
2 tspextra virgin olive oil
-
2 pinchsmoked sea salt
- FISH
-
1 1/4 lbcod fillet, cut into 4 pieces

1 Tbspextra virgin olive oil
-
2 tspmexican blend spice
-
zest of 1 lime
-
1/2 stickunsalted butter
-
4garlic cloves, thinly sliced
How To Make garlic brown butter cod & strawberry salsa

1Combine salsa ingredients in a mixing bowl. Mix well and chill until ready to serve.

2Season cod pieces evenly with olive oil, spice blend and zest, then set aside. Heat a large thick-bottomed skillet on medium heat. Add butter pieces. When butter turns light brown, add the garlic slices. Fry garlic until golden brown, then remove from skillet. Do not overcook. Add cod to skillet. Fry 2-4 minutes, then carefully flip and continue to fry for 2-4 minutes until cod is cooked through. Baste fish with butter during cooking. Transfer cod to 4 plates. Pour butter over cod. Top with garlic slices and salsa.
