We seldom eat fried foods in our home anymore, but every now and then we crave some fried whiting. Umm delicious with some Louisiana hot sauce. Hope you enjoy!

If you like fried fish, this fried whiting fish is a delicious option. It's a basic way to fry fish without dredging in liquid or an egg. Doing it this way allows the cornmeal to stick to the fish and helps to create a heavy crust. If you have never fried fish like this, the crust is thin and crispy. No sogginess at all. Whiting is flaky and has a similar flavor to cod.

Ingredients For fried whiting fish

  • 3 lb
    whiting, fresh fillet
  • 1 c
    organic corn meal
  • 2 Tbsp
    all-purpose flour
  • 2 tsp
    black pepper
  • 1/2 tsp
    cayenne pepper
  • 1 tsp
    salt
  • 1/2 tsp
    garlic powder
  • oil for frying

How To Make fried whiting fish

  • Cleaned whiting fish on a plate.

    If possible, buy your whiting fresh from the seafood market and have them fillet the fish. I wash the whiting quickly in vinegar then rinse with cold water and pat dry. Place whiting in a flat container and sprinkle with pepper and a little salt. Set aside in the fridge while you make the breading.
  • Corn meal, flour, black pepper, cayenne pepper, salt, and garlic powder in a dish.

    In a large mixing bowl, combine the corn meal, flour, black pepper, cayenne pepper, salt, and garlic powder.
  • Heating oil in a skillet.

    Heat a large skillet with oil on the stove. Make sure the oil is at high temp but not smoking.
  • Dredging the fish in corn meal.

    Take the whiting fillets and dredge them in the flour, one at a time, and shake off excess.
  • Frying the whiting fish.

    Place the whiting in the skillet. Cook each side until golden brown (about 5 minutes on each side). Fish will "float" when done.
  • Draining fried fish on a paper towel.

    Drain on a paper towel.
