I worked at a hospital for years and the cafeteria served crispy fried catfish nearly every Friday. I asked the manager for the recipe.. She just gave me the basics.... cornmeal, flour, salt, black pepper and paprika...dip in milk and deep fry. The breading is what makes it taste so good.

Ingredients For fried fish filets - catfish, talapia

6 slicecatfish or talapia, filets

2 cmilk
-
salt, to taste
- BREADING
-
1 1/2 cyellow cornmeal, stone ground preferred

1/2 call purpose flour
-
1/2 tspsalt
-
1/2 tspblack pepper, coarse ground

1 tsppaprika
- FOR DEEP FRYING
-
2-3 cshortening or vegetable oil-enough to deep fry fish

1Combine breading ingredients in gallon size ziplock bag. Shake to mix together well.

2Melt shortening or oil in skillet until hot.

3Place filets in milk. Remove and salt both sides, according to taste.

4Place 2-3 filets in bag and shake until coated. Remove from bag and dip again in milk.

5Place fish in ziplock bag for a second coating. Repeat this process for remaining pieces.

6Fry 3 pieces of fish in hot oil (iron skillet) for approximately 6-7 minutes on each side until done and golden brown. Repeat with remaining filets.
