yes we all have heard of hobo with ground beef and potatoes and onions and carrots...... well this is same idea but healthier foods..... chef jeff[my hubby] loves cooking these on the grill...no cleanup lol

Ingredients For fishy "hobo" bakes

  • bout 4 oz fish per person[use whatever kind of fish u like....i use tolapia most of the time]
  • 1 md
    yellow summer squash...sliced thin
  • 1 md
    zucchini...sliced thin
  • 1 md
    red bell pepper.. sliced in thin strips
  • 1 md
    yellow onion..sliced thin
  • 1 md
    carrot...sliced thin
  • several fresh spinach leaves
  • 1 pinch
    celery leaves...per pack
  • 1
    pat margarine per pack
  • salt and pepper...to taste...lots of times i use no salt

How To Make fishy "hobo" bakes

    have all veggies cut and ready to accemble...than take 4-6 lg pieces heavy duty foil[lg enough to put all in and close well]... spray good with non stick cooking spray
  • 2
    to the foil add in this order ... several spinach leaves[enough to have fish be completly on top of spinach] fish, zuccini,yellow squash,onion,pepper,carrot... than add celery and margarine and salt and pepper

    close each package seal well cook on med high grill for 20-25 min[or put in 350 oven for bout 30 min
