This is for the Sammie Challenge using FISH and CUCUMBERS. Two ways to make this: HEALTHIER VERSION: baked fish fillets and raw cucumber sticks. TASTIER VERSION: breaded, fried fish, and fried cucumbers. Either way makes a delicious, refreshing meal.

Ingredients For fish taco's
- LYNN'S TARTER SAUCE

1 clight miracle whip

1 Tbspplus 1 tsp. of ketsup

2 Tbspsweet pickle relish

1/2 tsplemon juice

1/2 tspblack pepper
- FISH TACO'S

8-16fish fillets, depending on size

8flour tortillas

2cucmbers, cut into sticks

2-4 Tbspflour
-
chopped lettuce
How To Make fish taco's

1Use your favorite fried fish recipe, or buy frozen battered fish and cook per package directions.

2Cut cucumber in half across.

3Use a mandolin and cut into "stick".

4Toss sticks with a little flour to absorb the moisture. Deep fry for a couple of minutes. Remove to bakers rack and salt and pepper.

5Mix 1 c. of miracle whip with 1 tablespoon each of ketchup and sweet relish and 1/2 tsp. of lemon juice.

6Shred or chop lettuce, set aside. Use a griddle or in a skillet sprayed with non stick spray oil. Heat till real hot (400°). Place tortilla on one side, heat till browned, fold in half with browned side inside, heat each half side of tortilla till browned.

7Place lettuce, fish and cucumber stings in flour tortilla. Drizzle with tarter sauce and lemon juice.
